  • Yield: 16 – 20 slices
  • Oven: 350⁰ F
  • Bake: 30 minutes

  • 1/2 c sugar
  • 1/3 c lentils
  • 1 1/3 c water
  • 3/4 c milk
  • 1 tsp salt
  • 2 tbsp extra-virgin olive oil
  • 1 envelope active dry yeast, with 3/4 c warm water
  • 5 c all-purpose flour

  • 1 can blackberries (pureed)
  • 1 c fresh pineapple (pureed)
  • 1/2 c sugar

Boil lentils in water 30 minutes until tender. Drain and set aside. In a saucepan, bring milk to a simmer. Remove from heat and add sugar, salt, lentils and olive oil. Add yeast that has been mixed with 3/4 cup warm water. In large bowl, combine 2 cups flour with milk mixture. Add remaining flour until dough is no longer sticky. Knead dough on floured surface until elastic. Place dough in bowl sprayed with nonstick spray. Cover and allow to rise until size doubles. Once doubled, punch down and shape how you please. Try a loaf, braid, twist or Vandal “V.” Once again cover and allow to rise about 30 minutes. Preheat oven, bake for 30 minutes or until bread sounds hollow when tapped. Move onto cooling rack.

Combine blackberries and heat with 1/4 cup of sugar until syrupy. Repeat with pineapple. Plate cooled bread and drizzle both sauces over the top. Cut into slices.
