Livestock
From February 2011 to January 2013, the UI Sustainability Center partnered with local livestock producers and processors and UI faculty and students to research the economic development potential of increasing livestock production and processing for local and regional markets in northern Idaho and Eastern Washington.
The project explored the viability of different USDA-inspected processing options by examining economic feasibility, environmental impacts, consumer demand, producer capacity and willingness to participate and processing capacity. Discover project publications, reports and other resources related to the project. Review the project results summary.
The Greater Palouse Meat Producers is a group of local people dedicated to establishing a USDA-inspected facility that will serve local producers and consumers. To learn more about the GPMP's ongoing work, please visit their website http://gpmp.weebly.com.
